Plantain Gluten-Free Empanadas Recipe: no flour!

Yes… Today I bring you a delicious empanadas recipe that uses no flour but rather uses plantains as the base.

Why plantains? Cooked plantains are nutritionally very similar to a potato, calorie-wise, but contain more of certain vitamins and minerals. They’re a rich source of fiber, vitamins A, C, and B-6, and the minerals magnesium and potassium. Did I mention that they are also gluten-free?

What I love the most is the FIBER content. Remember that fiber is important because it promotes bowel regularity. Fiber softens your stool and increases its overall size and weight. It is essential for our gut health and remember this: it is only found in plants!

This is what I used:

2 green plantains
Mozarella Cheese (you can use any filling you like, but this is what I had in my kitchen at the moment)
Salt to the taste

This is what I did:

Preheat your oven to 300.
Peel and cut the plantains.
Boil them until they are tender.
Smash them with a fork.
Add a bit of the water you used to boil them and use your hands to give them the desired texture.
Follow the video for the following part.. I really don’t know how to put this part into words.
Put in the oven for around 20 minutes.
