This is a delicious post workout snack!!!
These no bake, chickpea based, energy balls have 6 or 7 ingredients – depending on whether you want to add hemp seeds on top-, they are just sweet enough to taste like dessert but not so sweet that they’d make you crave more more sugar. They have the ideal carb, protein and healthy fat ratio and they fill you up so that you can wait comfortably until your next meal.
This is what you will need:
- 1 1/2 cups no-salt-added cooked chickpeas, rinsed and drained
- 1/2 cup all-natural smooth peanut butter
- 1/3 cup honey
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine sea salt, or more as needed
- 1 1/4 cups ground oat flour
Instructions:
Mix all ingredients in a food processor.
Add mixture to a large bowl, and store in the refrigerator for about two hours.
Using your hands form energy bite mixture into 1″ balls.
— optional: Sprinkle hemp seeds or chia seeds on top.
