Did you now that potatoes are a good source of fiber, which can help you lose weight by keeping you full longer. Fiber can help prevent heart disease by keeping cholesterol and blood sugar levels in check. But let’s get to the point… How can you make a delicious potato rosti??
First of all, I had no idea what a potato rosti was until I made this… but to simplify it, you can think of it as a pizza where the dough is made exclusively out of potatoes. YUM!!!
Ingredients:
One medium potato
A bit of butter (or ghee)
Mozzarella Cheese (as much as you want)
The toppings you like. I used cherry tomatoes, mushrooms, parsley and oregano.
Instructions:
Wash and peel your potato.
Grate it and squeeze it to get rid of all the liquid.
In a hot saucepan, add the butter or the ghee until it melts.
With the use of a spatula, spread the potato.
Add salt.
Cook for 15 min and flip.
Add the cheese first and then the rest of the toppings.
Wait until the cheese has melted and VOILA!!!
If you have pesto sauce you can also add it.. it tastes amazing!
