Cauliflower Pizza – KETO friendly, without flour!

This is a very simple, healthy and delicious recipe that you can share with everyone at home! It is so yummy, no one will know they are eating cauliflower!

Did you know cauliflower is an extremely healthy vegetable that’s a significant source of nutrients. It is an excellent source of vitamins and minerals, containing some of almost every vitamin and mineral that you need.

It contains unique plant compounds that may reduce the risk of several diseases, including heart disease and cancer. Additionally, it’s weight loss friendly and incredibly easy to add to your diet. It also contains a high amount of fiber, which is important for digestive health and may reduce the risk of several chronic diseases.

So let’s get to it: By pulsing cauliflower in a food processor and then making it into a dough, such as in the recipe below, you can make a delicious pizza!!!

🛒 INGREDIENTS (8 portions)
BASE
▪️ 300 g cauliflower.
▪️ 80 g Parmesan⁄mozzarella cheese.
▪️ 1 large egg.
▪️ 1 teaspoon garlic.
▪️ 1 pinch salt
COVERING
▪️ 80 g mozzarella strands.
▪️ 50 g tomato sauce.
▪️ 30 g mushrooms.
▪️ 1/4 sliced red bell pepper (julienne)
▪️ 1/4 sliced yellow bell pepper (julienne)

🍳 PREPARATION.

  1. Preheat the oven to 180°C 🌡.
  2. Place cauliflower in a food processor and pulse until it looks like fine rice 🍚.
  3. To remove the moisture from the cauliflower, heat the cauliflower rice in a skillet over medium low heat, stirring often so it doesn’t burn, for about 10 minutes.
  4. Once it looks somewhat dry, stir in the string cheese, and the garlic.
  5. Continue cooking over medium heat until the cheese 🧀 melts.
  6. Remove the pan from the heat, let cool for a minute and add the egg. Mix until a dough forms.
  7. Place the dough on a non-stick baking sheet. You can spray with a little oil to prevent the dough from sticking.
  8. Roll out the dough into a pizza shape and bake in the oven for 20 minutes or until lightly browned.
  9. Add the toppings: tomato sauce, more cheese, onions, peppers and mushrooms, and lace the pizza back in the oven for 10 minutes or until the cheese melts.
