Bugs Bunny had it all figured out!!! I always wondered how come he was always having carrots, all day, every day… Well, I might have an answer πŸ™‚πŸ™‚πŸ™‚πŸ™‚β€‰
 
Carrots are delicious, crunchy, tasty and highly nutritious! They are a particularly good source of beta carotene, fiber, vitamin K1 & potassium. 
 
But what are those good for anyway? 
 
πŸ₯• Beta carotene is a red-orange pigment found in plants and fruits and is a precursor of Vitamin A – which means our bodies convert beta carotene to Vitamin A, which is important for normal vision, the immune system, and reproduction. 
 
πŸ₯• Fiber helps clean out bacteria and other buildup in your intestines, and reduces your risk for colon cancer. It also helps keep you regular… which makes me ask: do you do number 2 every day? 
 
πŸ₯• Vitamin K1 plays an essential role in incorporating calcium phosphate into bones and is subsequently important for regular bone growth. It also plays a crucial role in blood clotting, since it activates blood clotting factors as well as coagulation-inhibiting factors. 
 
πŸ₯• Potassium helps regulate fluid balance, muscle contractions and nerve signals. What’s more, a high-potassium diet may help reduce blood pressure and water retention, protect against stroke and prevent osteoporosis and kidney stones.

Easy Oven Roasted Carrots

Roasting carrots is easy and this technique can be applied to most veggies:

  1. Prep Carrots: Wash, peel (optional, I don’t peel them), and cut if they’re large.
  2. Season: Toss carrots with olive oil, salt, pepper and oregano.
  3. Roast: Place carrots on a pan and roast (per recipe below) until browned and tender (around 15 minutes at 200 F)
