How to make a Cottage Cheese Cheescake? Easy recipe!

I dont know if you knew this, but my favorite dessert ever is a CHEESECAKE. And I am thrilled to share with you this healthy cheesecake recipe I learned in one of my healthy eating certifications.

Why Cottage Cheese?

Cottage cheese is a low calorie cheese with a mild flavor. Its popularity has grown in the last few decades, and it’s often recommended as part of a healthy diet. It is not only high in protein but also essential nutrients.

For these reasons, it’s widely used by athletes and in weight loss plans.

One cup (226 grams) of low fat (1% milk fat) cottage cheese provides the following

  • Calories: 163
  • Protein: 28 grams
  • Carbs: 6.2 grams
  • Fat: 2.3 grams
  • Phosphorus: 24% of the Reference Daily Intake (RDI)
  • Sodium: 30% of the RDI
  • Selenium: 37% of the RDI
  • Vitamin B12: 59% of the RDI
  • Riboflavin: 29% of the RDI
  • Calcium: 11% of the RDI
  • Folate: 7% of the RDI

Regular cheesecake are made with cream cheese, which is equally delicious, but higher in fat content (around 70 grams of fat in a cup, vs 2,3 grams of fat in a cup of cottage cheese). So if you are trying to lower your fat intake, this recipe is for you!

Ingredients:

For the crust: around a quarter cup of granola (I used my homemade granola).

Healthy Granola for the Crust

For the cheesecake:

– 16 oz of cottage cheese
– 2 eggs
– 1/3 cup of sugar
– 1 lemon
– 1 tbsp flour

Instructions

Blend the granola to form the crust. Add the crust to a previously greased container (I used butter) You will simply need to mix all ingredients in the blender and to the container. Bake for 30 min at 350 F
