Low Carb Granola Bars Recipe

These “keto-friendly” granola bars are composed of healthy fats and protein to balance blood sugar and sustain energy levels throughout the day. They contain chia and hemp seeds, rich in fiber and Omega-3.

I use erythritol is a sweetener that has no effect on glucose or insulin levels, cholesterol, or triglycerides, so it can be consumed safely by diabetics.

You will need:

1 egg
6 tbsp Erythritol
3 tbsp Natural Peanut Butter
1 tbsp hemp seeds
1 tbsp chia seeds
1 ounce unsweetened shredded coconut
half cup of almonds
half cup of pecan nuts
a pinch of salt

Instructions:

  • Preheat to 350 degrees F and line a baking dish with parchment paper.
  • Chop nuts. Add almonds to a food processor, pulsing only a few times, then add pecans and pulse again until nuts are about 1/4 inch in size.
  • Add dry ingredients. Transfer nuts to a bowl and add pumpkin seeds, shredded coconut, hemp seeds and salt.
  • Mix wet ingredients. In a separate bowl, combine peanut butter and the egg.
  • Combine. Add nut butter mixture to dry ingredients.
  • Press. Push the mixture firmly into the prepared baking.
  • Bake. Keep in the oven until edges turn golden brown (around 10 to 15 min).
  • Cool and cut. Cool the sugar free granola bar recipe completely in the pan before removing. Lift the parchment paper out and slice into bars.
